my favorite gazpacho

In preparation for tomorrow’s fourth of july festivities, I just made a fresh batch of my favorite gazpacho to bring to the beach house I am visiting.  I’ve made it for years and during the warm summer months seem to make it once a week – it’s that good {not to mention raw, vegan and incredibly healthy}.  When I have dinner guests, and ask them if they have any menu requests, they often request I make “the gazpacho”.

If you are looking for a great summer starter that’s light, healthy and easy to make, I highly recommend you add this to your menu.  Pair it with the open faced lobster sandwich I featured on Friday and you’ll have a very happy group of guests this 4th of July.  The recipe below serves 4 as a first course or 6 as an amuse-bouche.

ingredients:
4 cups chopped peeled cucumber
4 cups chopped fresh pineapple
1 cup fresh pineapple juice
1 small jalepeño pepper, seeded and diced
1 small scallion chopped
1 tablespoon fresh squeezed lime juice
2 teaspoons sea salt
1 handful cilantro leaves plus some extra for garnish
3 tablespoons avocado oil {you can also use olive oil}
handful of finely chopped macadamia nuts {optional}

in food processor add 3 cups each of cucumber and pineapple, pineapple juice, jalepeño, scallion, lime juice and salt. Process until smooth.
add remaining 1 cup of pineapple and 1 cup of cucumber, handful of cilantro, and 1 1/2 teaspoons of avocado oil. pulse the food processor a few time to keep the gazpacho chunky.

if you are not serving immediately, chill it {the colder the better}.

when ready to serve, stir the gazpacho as it tends to separate a bit.  Divide among bowls and drizzle with avocado oil, chopped macadamia nuts and cilantro.
