gilligan’s pop-up

I love a pop-up concept.  When done well it’s a really interesting addition to a neighborhood or event that stays for a limited amount of time and is super fun to check out + experience while it lasts.  Several years ago, I worked on a pop-up store in Soho to launch a brand new product concept during fashion week for a client, and the buzz around the temporary set-up and events to support it, really helped them reach a whole group of consumers they would never have normally had the chance to get in front of.  As a consumer they are fun to experience and for a brand they can by incredibly beneficial for a brand launch or new product concept.

This summer the always lovely Soho Grand in NY has opened a pop-up restaurant in its adjacent courtyard called Gilligan’s.  The restaurant is a nautically inspired restaurant that brings a Hamptons-esque, seaside vibe to Manhattan, and serves a summer themed menu in a private al fresco environment.

According to their website, their ingredient-driven menu includes, salads, grilled whole fish and meats sourced from the best farms and fishermen on Long Island.  Their {chalkboard} menu changes daily and ranges from a a whole sea bass atop grilled asparagus and salsa verde, to a roasted beet salad served with horseradish crème fraiche and arugula, to thin-crust pizzas.

Oh and I forgot to mention the cocktails.   They have a frozen watermelon margarita that sounds divine!!  I don’t know about you, but the next time I am in Manhattan, I will be stopping by Gilligan’s to check out this new concept while it lasts {through end of September}.
