raw carrot | ginger | lime soup

As you know from yesterday’s post, I am in the midst of planning my Easter brunch, the menu being a large part of that.  I was planning on having soup as the first course, but after a long winter, I think I have overdone it with hot soups.  One of my favorite soup recipes is for a raw Carrot, Ginger, Lime soup from Raw Food Real World {one of my go-to cookbooks for over 5 years now because it is loaded with fresh healthy raw recipes, all of which are delicious!}.  This soup is easy to make, uses only fresh and raw ingredients and the lime and ginger flavor make it a great way to start off a meal with light, clean and balanced flavors.  I have served it at several dinner parties and it’s always been a hit, and plan to serve it for Easter as well.

In the past I have cheated and bought carrot juice and it’s tasted wonderful, however this time I plan to juice the carrots myself for ultimate freshness.

Creamy Carrot Ginger Soup
serves 2

3 cups carrot juice
1 small ripe avocado
1/3 cup coconut meat {optional}
1/4 cup lime juice
2 tablespoons agave nectar
1 tablespoon minced ginger
1/4 teaspoon cayenne pepper
1/4 teaspoon sea salt

for garnish:
2 tablespoons avocado oil for garnish
few springs of fresh cilantro for garnish

Blend all in blender until smooth.  Divide among serving bowls.  Garnish with a drizzle of avocado-lime oil and fresh cilantro leaves and serve.  I also omit the coconut meat above and garnish with a melon ball size scoop of naked coconut flavored Coconut Bliss ice cream which is dairy free and made with coconut milk.  It melts into the soup and adds a lovely flavor.

Although I prefer it cold, you can heat this in a saucepan on very low heat stirring it continuously for a few minutes until it is warmed through.
