an early spring menu

Isn’t it lovely that all sorts of spring produce is coming our way in the coming months?  The Spring season is always a refreshing time to cook because ingredients that we have not seen all winter begin to make their way into our kitchens – a whole new set of resources to work with!

A group of girlfriends in my neighborhood and I started a healthy cooking club this winter.  They are all excellent cooks and true foodies, so as you can imagine, getting together once a month and taking turns hosting the dinners at each of our places is a lot of fun.  The criteria of our cooking club is to keep it healthy and use whole foods which each of generally does on our own anyway.  Earlier this week it was my turn to host and I thought I would share my menu with you, with spring entertaining on the horizon and all.

I was excited to incorporate fresh asparagus into the menu a true sign of spring.  The halibut dish is really quick and easy to prepare – you wonder how it can taste so good, and the dessert is dairy and gluten free with a raw filling.
