a winter pick me up

a winter pick me up | Mango Smoothie

So we had yet another snowstorm in Boston yesterday…these perpetual snowstorms make spring seem so far away.  I shared with you a couple of weeks ago that drinking green juices in this weather can  be a challenge so I’ve been seeking out alternatives,  to try to warm myself up and keep from the winter blues.  Over the past few weeks  I’ve been mixing up this lovely mango smoothie.  There is just something about tropical fruit combined with coconut water on a cold day that is a {mentally} healthy reminder that spring/summer is really not that far away.

Of course, the best time to buy mangos is when they are in season, which is basically May – September, but I’ve been able to find mangos both fresh and frozen to hold me over until the season arrives.

The recipe is pretty easy and quick, essentially you combine the ingredients below in a mixer/blender and blend.

1 1/2 cups mango {diced}
1 cup coconut water
1 1/2 tablespoons agave nectar
1 teaspoon vanilla extract
juice of 1/2 lime
a pinch of sea salt
