a noteworthy dessert

I hope that you and your loved ones had a wonderful Christmas holiday!!  I feel very thankful to have had another beautiful holiday with my family.  This year I offered to make a dessert for Christmas day, something I don’t typically do {make dessert}.  I am not sure why but I always seem to lean towards cooking savory meals versus baking sweet treats.

I came across this recipe by Kate Bradley for a vegan pistachio, coconut cheesecake and while I was nervous about taking a chance on this recipe for a holiday, I have to tell you it came out beautifully.  Dairy free & sugar free with a nut and coconut base this cake tastes as good as it looks {and it does taste like cheesecake}.  It was a crowd pleaser and relatively easy to make.  Once I topped it with the figs, pistachios and coconut flakes, it looked like a work of art.

You can find the recipe here.  I omitted the stevia and agave on top as I was afraid of it becoming too sweet.  This was such a hit and a guilt free indulgence,  I can’t wait to make it again for my next dinner party!
